RECIPE
Cajun Dirty Rice
1 pound ground round or sirloin
1 pound of lean ground pork
1 green sweet pepper, chopped
1 small bunch of green onions, chopped
1/2 cup chopped fresh flat-leaf parsley
Salt & cayenne pepper to taste
Cayenne Pepper or Tobasco Sauce (optional)
2 cups of cooked rice
 
In a heavy Dutch oven, brown the meats and veggies slowly stirring often.  Season with salt and cayenne pepper to taste.  When the meat is no longer pink and the veggies are soft, add the cooked rice.  Mix well until heated through.  Add hot sauce to your own taste.   Traditionally served with baked sweet potatoes and "smothered" green beans with chopped onion, new potatoes, and seasoned with andouille sausage.

Cajun Holiday Candy
1 quart of pecans, shelled, and finely chopped
1 large box of raisins
1 box of vanilla wafers crushed well
1 can of sweetened condensed milk
 
In a large bowl, mix all ingredients until well blended.  Divide mixture in half and on a piece of waxed paper dusted well with confectioners sugar, roll the mixture out into a log making sure the log is well coated with the sugar.  Repeat with remaining mixture.  Wrap each log individually in clear plastic wrap and chill well (several hours at least).  To serve, cut in 1/4 slices as this is a very rich candy.  The logs can be wrapped in plastic and then aluminum foil and put in the freezer for longer storage.  (Traditionally served during the holidays and celebrations of any kind especially weddings and christenings.)
